Kuraga, The Delicacy

Kuraga is a term used in central Asia for dried apricots with stone, halved and stoneless ones are called Uyruk. When treated with sulfur dioxide, the color turns vivid orange. Organic fruit not treated with sulfur vapor is darker in color and has a coarser texture. The best sorts are collected when already sun-dried on the tree.
